A tender keto slow cooker meatloaf made with pork, beef, almond meal and simple seasonings. No breadcrumbs, minimal prep, and only 3g net carbs per serve.
My favorite thing to do is find recipes that are low effort but also nutritious and share them on this blog. This slow cooker meatloaf fits that brief and is one of my all time favorites. It always turns out so tasty and needs almost no effort. There’s no chopping, no frying, and no standing over the stove. Everything goes into one bowl, then into the slow cooker, and dinner is ready in about four hours. You can pair it with steamed veg, pumpkin, frozen stir-fry mixes, salad, or just enjoy it on its own.

Ingredients
• 500g / 1lb ground beef
• 500g / 1lb ground pork (optional, use all beef if preferred)
• 3 eggs, beaten
• ½ cup almond meal
• ½ cup bone broth (or any stock)
• 2 tbsp tomato paste
• Seasonings: 1 tsp salt, 1 tsp all-purpose seasoning, 1 tsp garlic powder
• Optional base: thick cabbage slice, onion halves or egg rings to lift the meatloaf off the bottom
(Putting something underneath stops the meatloaf from sitting in the juices while it cooks.)
Method
1. Line your slow cooker with baking paper if you want easier cleanup. If you do, use a double layer so it doesn’t break when you lift the meatloaf out.
2. Mix all the ingredients together in a large bowl until just combined.
3. Shape into a loaf.
4. Place a cabbage slice (or other veg) in the bottom of the slow cooker to act as a “trivet”, then place the meatloaf on top.
5. Cook on LOW for 4–6 hours. Slow cookers vary, so check the internal temperature.
6. The meatloaf is ready when the centre reaches 75°C / 170°F. Mine reached 90°C at the 4-hour mark, so I switched it off early.
7. Serve with salad, vegetables of your choice, or add stir-fry vegetables to the slow cooker in the last 60–90 minutes
Makes 8 portions so it’s perfect as lunch the next day or two as well.

Sodium is 666mg (You can reduce this by adjusting seasoning and using a salt reduced bone broth or stock. You can also simply remove the teaspoon of added salt, the meatloaf tastes totally fine without it)
