Easy Eats: Scrambled eggs in a mug

Today is World Egg Day – a perfect occasion to celebrate one of the most versatile and nutritious ingredients: the humble egg. If you’re looking for something easy and satisfying, eggs are a fantastic option. Not only do they cook quickly, but they’re also simple to prepare and can be transformed into a variety of quick meals.

I want to share a super easy egg recipe that’s perfect for low-spoon days. Whether you’re after a fast breakfast or a quick snack, this recipe is a lifesaver. It’s made entirely in one dish (the mug), which means minimal mess and barely any washing up.

Scrambled egg in a mug

1 or 2 eggs

1 tablespoon of milk (or milk substitute) per egg

Seasoning (optional)

Method

Simply scramble the eggs in the mug and cook for 90 seconds in the microwave.

It doesn’t get much easier than this. And the best part is you can add other ingredients if you feel like it or just keep it very simple if you don’t. 

Some possible additions:

Grated cheese (added during the last few seconds of cooking)

Chopped deli meat like ham or salami

Smoked salmon

Peas or corn from a can

Diced mushrooms

Cherry tomatoes

    I love recipes like this – way easier than even the “low effort” ones you find online that still ask you to chop things or pan fry.
